A must-try varietal (once thought to be lost to history) from one of the wildest places left in Europe, this pecorino’s brilliant, light straw color is perhaps a bit of a red herring: Though complemented by delicate aromas of white flowers, the driving force of the bouquet is an abundance of citrus. The palate is fruit-driven as well, with notes of ripe pear, apple, citrus and apricot barely kept in check by notes of hay, jasmine and the subtle nuttiness of almonds. The medium-to-full body is kept fresh by the acidity, leading to a mineral finish that goes excellently as an accompaniment to lighter meals.
